A bit about KINAKO...

As Sugar was not introduced in Japan until the 16th century and wasn't widely available until some time in 19th century (before sugar), Kinako was used. Kinako is roasted soybean flour that has a sweet taste and powdery texture. It's actually a pretty common ingredient and also a topping for both modern & traditional Japanese desserts. Kinako isn't as sweet as normal refined sugar, so majority of kinako desserts have a pleasantly mild sweetness to it...
You can buy Kinako flour at most local supermarkets across Japan.
